Oh how I love Soup.
Today was my first time making Potato Leek Soup.
I bumped into someone over Christmas at a local grocery store (Central Fresh Market) and he shared that he had a craving for Potato Leek Soup.
As he piled his groceries onto the counter the fresh leek looked inviting.
So today I took a chance and made some myself. It is so easy and delicious and only requires a few ingredients. You really should try making some yourself.
Prep time: 8 minutes Cook time: 20 minutes
3 large leek, use only the white and pale green parts, clean and chop.
2 Tbsp butter or coconut oil
2 cups of water
2 cups of vegetarian low sodium broth
2 lbs red skin potatoes,(4 large) peeled, diced into small pieces
Marjoram – dash
½ tsp Herbamare Original Seasoning
½ tsp Organic No-Salt Seasoning
¼ cup chopped fresh parsley or 1 tsp dried
½ tsp dried thyme
1) Cook leeks in butter or coconut oil with salt and pepper on low heat for 10 minutes. Do not brown.
2) Add water, broth, and potatoes and spices. Bring to a boil. Simmer for 20 minutes. Puree soup in pot with a hand held blender to desired consistency.
Season with fresh ground pepper.
YIELD: Serves 4
